We’ve known Mellow since before we officially opened our doors as Dimo’s, over six years ago. He works at the Metro, so he’s seen many seasonal specials and offbeat inventions throughout the years, but his favorite is still our BBQChickenBaconCheddarRanch. He’s such a fan he even managed to convince a former roommate to break five years of veganism for a slice.

Mellow’s dream pizza is actually one of our cookbook favorites: The Italian–aka the Joe Manganiello–with Chicago-style beef and giardiniera.

Outside of the pizzaverse, Mellow spends most of his time gigging for your favorite bands at the Metro. He’s also been skateboarding since he was 12, and loves cheering for and getting emotionally drained from Blackhawks games. You might catch him at the movie theatre, too, where he’s a self-professed “huge cinema rat.”

Mellow’s parting words for the pizzaverse? “Remember, the night is always young.”
