“Fiesta on a plate”: the idea behind our latest special, the Fish Taco. It’s a simple idea, but to execute it perfectly we had to consider every aspect of the pizza.
First, the appearance. It had to look colorful, inviting, and a little spunky. So we made a cole slaw by tossing bright red cabbage with jalapeños and lime. It was beautiful, but not enough. A light and refreshing pico de gallo brought more red and green to this vibrant ‘za. We’d done it!
Next, the flavor. It had to taste sweet, sour, spicy, and tangy all at once—an explosion in the mouth. The jalapeño and lime brought the heat we needed, but there was still something missing. We created a light and tangy avocado crema, and voilà: with just a little drizzle of this sweet green sauce the flavor was exquisitely balanced.
Finally, the party. We had to create something for all our crustomers. Yes, we made a fish taco with delectably savory beer-battered tilapia, and yes the fish had excellent texture and just a bit of crunch on the outside. Of course we had made a slew of amazing accompaniments, which together formed the ultimate fish taco ‘za. But we couldn’t rest until we had made a vegan taco too, complete with our mouth-watering seitan.
